EGG KURMA



Ingredients:
  • Eggs - 2
  • Onion - 1
  • Tomato - 1
  • Ginger / Garlic paste - 1tbs
  • Coconut milk - 1/2 cup
  • Red chilly - 2 
  • Cinnamon - 2 
  • Cloves - 2
  • Coriander seeds - 1/2 tbs
  • Cumin / Jeera - 1/2 tbs
  • Fennel - 1/4 tbs
  • Pepper corns - 1/2 tbs 
  • Cashewnuts - 5 
  • Salt
  • Water
  • Oil
  • Coriander leaves
Instructions:

  1. In a pan  roast clove , cinnamon , coriander seeds , red chillies , cumin , fennel and pepper and add onions and saute well
  2. Then add tomatoes and salt and cook for a minute
  3. Let it cool and grind it to a smooth paste by adding cashews
  4. In a kadhai add oil and add clove , cinnamon and cardamom
  5. Add in curry leaves and ginger garlic paste and cook well
  6. Add in the ground paste and cook well
  7. Once the raw smell goes add in salt and water and allow it to boil
  8. In mean time boil the eggs
  9. Add coconut milk and cook for 3 mins
  10. Finally add chopped coriander leaves and add the boiled eggs
  11. Serve
