Ingredients:
- Eggs - 2
- Onion - 1
- Tomato - 1
- Ginger / Garlic paste - 1tbs
- Coconut milk - 1/2 cup
- Red chilly - 2
- Cinnamon - 2
- Cloves - 2
- Coriander seeds - 1/2 tbs
- Cumin / Jeera - 1/2 tbs
- Fennel - 1/4 tbs
- Pepper corns - 1/2 tbs
- Cashewnuts - 5
- Salt
- Water
- Oil
- Coriander leaves
Instructions:
- In a pan roast clove , cinnamon , coriander seeds , red chillies , cumin , fennel and pepper and add onions and saute well
- Then add tomatoes and salt and cook for a minute
- Let it cool and grind it to a smooth paste by adding cashews
- In a kadhai add oil and add clove , cinnamon and cardamom
- Add in curry leaves and ginger garlic paste and cook well
- Add in the ground paste and cook well
- Once the raw smell goes add in salt and water and allow it to boil
- In mean time boil the eggs
- Add coconut milk and cook for 3 mins
- Finally add chopped coriander leaves and add the boiled eggs
- Serve
